Tahini Soba Noodles

1-8 ounce package soba
1 cup water
2 chicken breasts, sliced
2 Tbsp. coconut oil
4 Tbsp. tahini paste
1/4 cup maple syrup, good quality
Juice and zest of 1 lemon
1/4 cup tamari or soy sauce
1 tsp garlic chili sauce (red rooster)
1½-2 inches ginger, peeled and chopped
1 garlic clove, peeled and diced
2/3 cup water
2 green onions, minced


Cook Soba noodles according to package directions While noodles cook, sauté chicken. In a food processor combine tahini, maple syrup, lemon juice, zest, tamari, chili paste, ginger and garlic. Puree until smooth. Slowly add water to the food processor and puree again until you reach your desired consistency. Combine tahini sauce with soba noodles, chicken and green onions. 4-6 servings.
